Golden Honey Chicken

 1 3-4 lb. Whole Chicken
 1 Lemon
 2 tbsp Grated Ginger, divided
 1 tsp Coarse Salt
  cup Olive Oil
 ¼ cup Honey

Preheat oven to 350 degrees F.

Rub chicken skin with lemon half. Sprinkle with 1 teaspoon ginger and salt. Combine oil, honey and remaining ginger and brush the chicken with this mixture.

Roast for 2 hours 2 Hours, basting occasionally with honey mixture.

Serve immediately.
