Potato and Broccoli Latkes

Try this tasty twist on our favorite Chanukah treat!

 2 cups B’gan Chopped Broccoli
 3 large Idaho potatoes, peeled and cubed
 3 cups Panko, divided
 3 eggs, lightly beaten
 ½ cup parmesan cheese
 1 tsp salt
 ½ tsp white pepper
 ½ cup canola oil for frying

In a large pot, cook broccoli in boiling water for 5 Minutes, until tender. Remove broccoli from pot with a
slotted spoon and place in a
bowl. Add potatoes to boiling water and cook until tender, about 20 Minutes. drain, mashand let cool.

chop broccoli. Mix broccoli, 1 cup panko, eggs, cheese, salt and pepper into the potatoes. Form mixture into sixteen 2 inch patties. Coat patties with panko.

Heat canola oil in a large skillet over medium heat. When the oil is hot, add latkes and fry until golden, about 4 Minutes per side. Drain on paper towel. Transfer to platter and serve.

Latkes can be prepared a day in advance. To reheat, place latkes on a cooling rack over a sheet pan. Bake at 400 degrees uncovered for 10 Minutes.
